Most of his coffee is shade grown, the trees aid in the water retention. The farm has amazing spring waters and waterfalls. Quality is the key for Marco, as he only picks the best cherries on his farm. After the cherries are picked; the washed process/method is used, after screening only the ripe cherries are allowed into the de-pulping machine. Once de-pulped the fermentation process period takes roughly 24 hours. After fermentation, the coffee is washed and sun-dried on patios and drying beds until 11% humidity.

Please note the re-useable tins won't fit through your letterbox so will need to be left outside your door if you are local. We are still happy to post it but might involve you picking it up from your Royal Mail depot.
