The Kibingo washing station is in the commune of Kayanza in northern Burundi.
Each small holder produces a relatively small harvest, the average small holder has approximately 250 trees, each tree yields about 1.5KG of cherry.All the coffee is selectively hand picked. After sorting cherry is pulped within 6 hours. Once pulped coffee is placed in Epoxy-coated fermentation tanks. Oro yeast is added to the tanks. The tanks are left to ferment fo 96 hours. The longer fermentation time for yeast processed coffees allows for more developed flavours, complexity and acidity. Brightness and floral notes are also boosted by the lengthened fermentation time. Parchment is then laid out on raised beds from sunrise to sunset for 2-3 weeks).
